200 grammi di farina bianca, 100 grammi di farina di grano duro, 200 grammi di farina manitoba,150 grammi di lievito madre, 2 cucchiai di olio, 1 cucchiaino di sale, 1 cucchiaino di zucchero, 300 ml di acqua a temperatura ambiente.
Ho impastato tutto con la planetaria ed ho lasciato lievitare per 5 ore.
Trascorso questo tempo ho formato 5 panetti o pesetti, che ho lasciato lievitare sul piano di lavoro infarinato, coperti da foglio di plastica e canovaccio, per altre 2 ore.
ho lavorato i panetti dal centro verso il bordo, ho condito, infornato e voilà 5 minuti e la pizza è pronta, fragrante e croccante come in pizzeria.
